Dry Pot
Dry pot or Gan Guo differs from the traditional soup-based hot pot. It originated from a mountain area in Chongqing and later became popular in Sichuan. Local people added mainly vegetables in a dry wok with seasonings similar to hot pot. Without a soup base, the flavors are more fully absorbed by the ingredients. And, if any guests were home, they would add meat, seafood, or meatballs to make it richer.
